Happy New Year! I hope 2016 was full of good health, prosperity, family, friends and love. As we start 2017, I’m looking forward to everything that is to come and am choosing to make the best of it! To start my day off right and on a healthy note, I’m eating a great breakfast of fresh fruit and poached eggs. 

The key to poached eggs is your poaching liquid and patience. Start with about 2 inches of liquid, water or broth and 1 TB of vinegar.  Your liquid must be simmering not boiling. You want bubbles at the bottom and coming up the side.  I cook mine approximately 5 mins, if you prefer a softer yolk start around 3 mins.

A spoonful of salsa and sprinkle of cheese completes my perfectly poached eggs!
