Hi y’all! I have been MIA for awhile now but I promise I have some great recipes coming up! I hope you all had a wonderful Halloween full of spooky foods and frightful costumes. I can’t believe Thanksgiving is in less than a week!! Before I get to holiday food, however, I have one more home UT game; which calls for cheesy and yummy dips!

 I had left over bacon from breakfast so thought I’d make my version of Charleston Cheese Dip and a nice spicy buffalo chicken dip.

Buffalo Chicken Dip, preheat to 375

  • 8oz softened Neufchâtel cream cheese
  • 2 9.75oz canned chicken, drained & shredded
  • 1 1/2 C mozzarella cheese
  • 1/2 C hot sauce
  • 1/2 C ranch dressing
  • 1/2 C crumbled blue cheese

Mix all ingredients together and place in sprayed deep dish casserole pan. Bake in preheated oven for 25 mins or until hot & bubbly. 

Charleston Cheese Dip

  • 8oz softened Neufchâtel cream cheese
  • 1/2 C mayo
  • 1/2 C sour cream
  • 1 1/2 C sharp cheddar
  • 3/4 Pepper Jack
  • Dash cayenne pepper 

Mix all ingredients together and pour in sprayed casserole dish then;

  • Crush 10 ritz crackers over top
  • 6-8 pierces crisp bacon crumbled over top

Bake 375 preheated oven for 20-25 mins until hot and bubbly.
