Fall is here!! Not only do I love the gorgeous fall colors and perfect weather but the comfort food. When I think of fall, I think of chili, soup, stews, casseroles and pot roast! Tonight I decided on an easy (it was one of those days) quick and healthy soup. You could certainly use ground chicken or beef in this soup as well, but I prefer turkey. 



Prior to serving, check your seasoning and add salt/pepper to taste.  Make sure to remove the bay leaf prior to serving! Serve with warm rolls or bread! Enjoy
