My new fave wine, with only 100 calories a glass and under $12, is Skinny Girl California red.  It’s smooth flavor has a hint of grapes and berries with a touch of mocha. Oh, and it is delightful with my chicken salad. Chicken salad shouldn’t be complex, my motto is the easier the better. I start with canned chicken that has been drained, add red seedless grapes that have been halved, some finely chopped walnuts for an earthy crunch, a pinch of sea salt and cracked black pepper and combine it all with real mayo. Those are the only ingredients you need for a delicious sweet and savory chicken salad. 

  • 20 oz canned chicken breast
  • 1/4 C finely chopped walnuts
  • 1/2 C halved red seedless grapes
  • Pinch of salt/pepper
  • 1 C mayo (I use Hellmans olive oil mayo) 

Mix until combined. If you prefer your salad to be a little more creamy, add more mayo, a little at a time until you achieve your desired consistency. Cover and refrigerate for at least an hour.  Serve over a bed of lettuce or on a buttery croissant.
