Rich, creamy mousse served with fresh strawberries is sure to be the perfect ending to a great dinner party! 

  • 6 oz semi sweet chocolate 
  • 3 TB unsalted butter
  • 3 egg yolks (reserve whites)

In double boiler, melt chocolate and butter until smooth. Remove from heat and whisk in egg yolks, 1 at a time; let cool, slightly.

  • 3 egg whites
  • 1/2 tsp cream of tartar 
  • 1/4 C sugar

Beat egg whites until foamy, add cream of tartar and sugar, beat until stiff peaks form. Fold into chocolate mixture.

  • 3/4 C heavy whipping cream
  • 3 TB sugar
  • 1 tsp vanilla 

Beat cream until it begins to thicken, add remaining ingredients and continue beating until peaks begin to form. I find that if you use an ice cold bowl, the cream comes together quicker. Fold whipped cream into chocolate mixture, making sure to not over mix as you will flatten your mousse. Cover and refrigerate several hours. I like to serve with fresh whipped cream and strawberries.
