Blueberries, brown sugar and oats.. Oh my! I love cobblers and crumbles.  This recipe is easy and delicious and is another perfect dish to serve your amazing moms on their special day. 

Blueberry crumble

  • 32oz frozen blueberries; unsweetened,  thawed rinsed and drained.  (You may substitute fresh berries)
  • 1 C sugar
  • 1 C water
  • 3 TB corn starch
  • 1 1/2 tsp vanilla
  • 1 1/2 C flour
  • 1 1/4 C oats
  • 1 C packed brown sugar
  • 1 tsp cinnamon
  • 1 stick butter, melted

Preheat oven to 350, spray 9×13 baking dish

In medium saucepan, mix 1st 5 ingredients; cook over medium heat until it begins to lightly bubble and thickens. Approx 15 minutes. Meanwhile, in lg mixing bowl, combine flour, oats, brown sugar, cinnamon and butter until coarse crumbs form.  Spoon about 2 C’s oat mix onto bottom of baking pan, press to cover. Pour blueberry mixture over crust and top evenly with remaining crumb mixture. Bake until golden brown, 50-52 mins. Serve warm with vanilla ice cream. Enjoy!
