I LOVE CHOCOLATE. I think I could live on cheese, chocolate and pickles. This is one of my absolute favorite desserts for many reasons: 1) it’s chocolate 2) it’s quick 3) it’s easy 4) it serves 4 but I like to make 1,cover the batter and pop it in the fridge and then I have dessert for another night😊 This cake is rich and decadent but light and fluffy, it’s perfect for a single girl night in or for entertaining.

Preheat oven to 425

Melt 1 stick butter with 2 oz chopped semi sweet chocolate, stir until smooth. Add 1 C powdered sugar and stir until well blended. Whisk in 2 eggs and 2 egg yolks. Stir in 6 TB flour. Pour in prepared (sprayed or butter/flour) ramekins. Bake in preheated oven for 13-15 mins. Let sit 1-2 mins, run knife around edge and invert onto plate. Serve warm with vanilla ice cream or whipped cream.
