I was sitting here thinking and realized I had 1/2 a roll of puff pastry left from my bananas foster, some Neufchâtel cheese, Swiss and ham left from chicken codon bleu so I naturally decided to make pinwheels. These tasty treats are perfect for brunch!

Mix 1 TB softened Neufchâtel cheese, 1 TB real mayo and about a tsp of Dijon; spread over puff pastry. Sprinkle 1/2 -3/4 C shredded Swiss cheese on mayo mixture then layer ham. I used ham and turkey because it’s what I had in my fridge. Roll your puff pasty and cut in even slices. Lay on a parchment paper lined cookie sheet and pop in a 400 preheated oven. Bake until golden brown, approximately 20-23 minutes.
