I previously mentioned that I have a love for foil packet meals. Why? That’s easy; convenience, no mess and pure deliciousness. When you pair moist and juicy chicken with 2 different cheeses and ham… Yummy! This recipe is so easy, it’s literally a quick fix, pop it in the oven and let it do its thing; oh and because it’s baked in foil you can spend your time doing things like playing rummy rather than cleaning a big mess.
Preheat oven to 400, lightly spray 2 pieces of large foil.
- 1 potato, thinly sliced, seasoned with salt & pepper
- 1 chicken breast
- 1 TB Neufchâtel cheese, softened
- 1 tsp Dijon mustard
- 1 tsp prepared pesto
- 1/4 C shredded Swiss cheese
- 2 or 3 thinly slices of ham
Lay potatoes on foil, accordion style. Place chicken breast on top of potatoes. Mix Neufchâtel cheese, Dijon and pesto; rub on chicken. Top with ham slices and Swiss cheese. Place 2nd piece of foil on top, fold edges to create a packet and bake 40 minutes. Let sit 5 minutes prior to removing from foil. Enjoy!
