I’m home from a wonderful vacation in which I had the pleasure of visiting the Grand Canyon. If you’ve not been, I highly recommend going, it’s absolutely stunning; this should be on everyone’s bucket list!  Now I’m home and back to cooking.  

I absolutely love spring time, everything about it from the smell of fresh cut green grass to the sweet smells of all that is in bloom.  Mostly, I love grilling!! Grilling allows for virtually NO clean up, which is GREAT!  Grilling also gives you so many flavor combinations. Tonight I opted for grilled potatoes that are full of cheese and bacon, paired with honey lime chicken.

Marinade for chicken breast

  • 1/3 C low sodium soy sauce
  • 2 TB honey
  • 1 TB Dijon mustard
  • Juice of one lime
  • 1 tsp cumin

Whisk together and pour over 2 boneless skinless chicken breasts that have been rinsed and placed in a plastic bag. Marinate for a minimum of 30 minutes. Grill until cooked thoroughly.


  • 2 potatoes, washed and diced into bite size pieces 
  • 2 TB olive oil
  • Bacon bits 
  • Cheese
  • Salt/pepper

Place diced potatoes in a bowl, drizzle olive oil over and coat completely. Micro 4 minutes, stir and micro 4 more minutes. This cuts down your grill time. Spray 1 piece of tin foil with non stick cooking spray and place potatoes on foil. Season with salt and pepper to taste, sprinkle cheese and bacon bits on top. Spray 2nd sheet of foil, place over top and create a pouch; leaving space for steam. Grill, 20-25 minutes until potatoes are fork tender.
