What can I say about bruschetta, it’s got it all; crunch, smooth fresh mozzarella and a tomato pesto garlicky mixture. YUMMY 

This version is perfect for a single girl night in or served as an appetizer for friends/family.  Oh and it’s healthy!

  • 1 Wasa multi grain crisp bread
  • 4 grape tomatoes 
  • 1/2 tsp minced garlic
  • 1/2 tsp basil
  • 1/2 tsp prepared pesto
  • 2 slices fresh mozzarella 

On your cutting board, roughly chop tomatoes then add garlic, basil,  pesto and salt/pepper to taste; run your knife through it until combined. Place mozzarella slices on crisp bread, top with tomato mixture and enjoy!
