What is there, really, to say about pimento cheese; it’s cheese! I often say I could live on cheese, chocolate and pickles and when you add cream cheese and jalapeño to the mix…. well it’s pure bliss.
Pimento cheese is so versatile in that you can eat it many different ways: as a sandwich, grilled cheese, with crackers, slathered on a burger, as a dip with veggies, etc., and this recipe is perfect for this weekends SUPER BOWL party.
Pimento cheese with jalapeños
- 3 oz cream cheese, room temp. As with my baking recipes, I use 1/3 less fat Neufchâtel cheese. I promise, you can’t tell it’s not full fat.
- 1/2 C mayonnaise
- 2 C grated sharp cheddar cheese
- 3 TB chopped pimento
- 2 TB chopped jalapeño
- salt & pepper to taste
- 1 tsp worcester
- 1/4 tsp garlic powder
- pinch of red pepper
Mix all ingredients in medium bowl, cover and refrigerate 30 mins before serving.
