Today was a great day; I worked, had a massage and a facial. Now that I’m home, it’s another quick fix meal. I already have left over rotisserie chicken so all I need is a side. I love broccoli and cauliflower and it pairs perfectly with chicken. This side is so easy and took less than 8 minutes. I popped a bag of steam fresh broccoli & cauliflower mix in the micro and let it steam 6 minutes. When it was done cooking, I emptied the veggies into a bowl, drizzled a little extra virgin olive oil on top as well as the juice of 1/2 a lemon. Fresh lemon juice adds freshness and brightens the flavor. I seasoned it with salt and pepper, 1/4 C Parmesan cheese and a pinch of red pepper flakes. Delicious, healthy, perfect for my cleanse and done in no time!
