This salad has it all; crunch, vibrant color and a perfect combination of sweet and savory. This week, I’m completing a 7 day cleanse. I won’t be fasting or juicing but with the cleanse I will be eating light and healthy so be prepared for lots of sensational salads over the next several days!
- 1 C prepared quinoa with brown rice mixture, cooled to room temp. I cook my quinoa in chicken broth which adds a layer of flavor.
- 1/4 C crumbled feta cheese
- 1/4 C dried cranberries
- 1/8 C slivered almonds
- handful of baby spinach
- 5 cherry tomatoes, halved
In a medium bowl, mix all ingredients. Dress with a drizzle of red wine vinegar and olive oil.
