I enjoy turkey more than once a year. I find it to be a great alternative to chicken and pork. Turkey tenderloins cook like chicken and are tender, moist and full of flavor.  You can marinate the tenderloin many different ways, this is one of my faves.

Roasted turkey tenderloin

Preheat oven to 390

In a small bowl, mix 1 1/2 TB dijon mustard, 1/2 tsp apple cider vinegar, 1 tsp worcester and 1/2 C Italian dressing; mix well. Season tenderloin with salt and pepper then brush both sides with marinade, place on rack in baking dish. Bake 40-45 mins. Serve over a bed of greens or mashed potatoes with pan gravy. 

Pan gravy

Over medium heat, melt 2 TB butter with 2 TB flour to make a rue. Whisk in 1 1/2 – 2 C chicken broth, a little at a time, season with salt and pepper to taste and simmer until desired consistency.
