Well it was another cold day and we are preparing for another round of snow. So, more comfort food it is.  This recipe has it all; meat, veggies and creamy parmesan mashed potatoes.  Yummy!

Shepards pie 

Preheat oven to 385 and spray 8×8 casserole dish

  • 1 lb ground beef
  • 1 stalk celery, diced
  • 1 shallot or small onion, diced
  • 1/2 C sliced mushrooms
  • 1 TB tomato paste 
  • 1 1/2 tsp worcester 
  • 1/4 tsp minced garlic
  • Salt/pepper to taste
  • 1/4 tsp cumin
  • 3 medium potatoes, peeled & diced 
  • 1/3 C parmesan cheese
  • 3 TB butter
  • 1/4 C sour cream
  • 2/3 C milk
  • 1 C corn
  • 1 C green beans
  • 1/2 C diced carrots, steamed 
  • 1 can cream of mushroom soup
  • 1/2 C sour cream

In a medium sauté pan, heat 2 TB olive oil and sauté onion, garlic, celery and mushrooms until softened 5-7 mins. Add hamburger and brown.while you brown your meat, boil potatoes for mashing. In a medium bowl mix green beans, corn, carrots, cream of mushroom soup and 1/2 C sour cream. When meat is browned, drain fat and add tomato paste, worcester, salt, pepper and cumin, stir til combined. Add meat mixture to veggies, stir thoroughly. Spoon meat / veggie mixture into casserole dish. Drain potatoes and add butter, parmesan cheese, milk and 1/4 C sour cream; mash till creamy and layer over meat. Bake in 385 preheated oven for 30 mins.
