On rainy dreary cold days, when  we are waiting for another snow storm to hit, why not enjoy some buttery crunchy caramel corn while cuddled up watching a good movie. It’s super easy and other than popping it in the oven for 10 mins to crisp it up, it’s made completely in the microwave!

Caramel corn

Preheat oven to 275, lightly spray a cookie sheet with non stick spray 

  • 1 bag micro pop corn, popped
  • 1 stick butter 
  • 1 C brown sugar 
  • 1/4 C Karo syrup 
  • 1/4 tsp salt
  • 1 tsp baking soda

In a micro safe bowl (preferably not plastic as I made that error once and it melted with boiling caramel, on my hand) melt butter, sugar, syrup and salt; micro for 2 mins and stir, micro another 2 mins add baking soda and stir until foamy. Pour over popcorn and stir until its completely coated. Put popcorn, in single layer, onto cookie sheet and bake 5 mins, stir then bake another 5 mins. Let cool and enjoy!
