I’m sorry I’ve been MIA for a few days, I was visiting family in MI! We had a wonderful time; lots of laughs, great company, delicious food, wine and even a mechanical bull debut!
Now that I’m home, I’m cooking my fave single girl’s meal; taco chicken. I love chicken, it’s definitely a single girl’s friend. I purchase boneless skinless chicken breasts and freeze them in individual freezer bags. This recipe is perfect for 1 or many and it’s EASY, QUICK, VIRTUALLY ZERO CLEAN UP AND DELICIOUS.
Single Girls taco chicken packets preheat oven to 385, lightly spray 2 pieces of tin foil
- 1 medium potato, thinly sliced
- 1 boneless skinless chicken breast
- 1 TB taco seasoning
- 1/4 C shredded cheese
- 1 1/2 TB salsa
- dollop of Sour cream
Salt and pepper your thinly sliced potatoes, arrange on 1 sheet of sprayed tin foil in accordion style. Rub taco seasoning on both sides of chicken and place on top of potatoes, top with salsa and cheese. Form a packet with 2nd foil sheet, spray side down. Pinch all 4 sides together leaving a pocket of air for steam. Bake 40 mins. Remove from oven and let stand 5 mins before unwrapping and plating. Top with a dollop of sour cream and enjoy!
