My favorite cookie is a chocolate crinkle. That recipe was one of my first posts and I had a request for a gluten free version. Well, you will be happy to know that I have a great gluten free alternative that rivals the original! These cookies are rich with chocolately goodness and moist.
- 2 1/2 C gluten free baking mix, I used King Arthur gluten free all purpose baking mix
- 4 oz unsweetened chocolate, melted
- 2 C sugar
- 1 TB vanilla
- 4 eggs
- 1 tsp cinnamon
- 1/2 C vegetable or coconut oil
- 1 C powdered sugar
In a medium bowl, mix melted chocolate, oil, sugar & vanilla until combined. Add eggs, one at a time and mix thoroughly. Stir in baking mix & cinnamon until a soft dough forms. Cover and refrigerate for 1-2 hrs.
Preheat oven to 350 / lightly spray baking sheet. Drop dough by tablespoonfuls into powdered sugar, roll into a ball while coating in sugar and place on baking sheet. Bake 10-12 minutes. Promptly remove and place on cooling rack.
