Occasionally, nothing sounds better than a light flavorful salad; tonight is one of those days. This salad can pair with grilled chicken or thinly sliced beef if you want a little more substance with your dinner but I find its a perfect single girl weeknight meal all by itself. On a side note, it’s quick, easy and very little cleanup!
Fresh mozzarella and tomato over a bed of quinoa.
- Box of quinoa, cooked per instructions. My favorite is Rosemary olive oil blend.
- 1 small tomato, sliced
- 4 oz fresh mozzarella
- Olive oil
- Balsamic vinegar
- 1/2 TB basil
- 1 TB feta cheese, crumbled
Place a bed of prepared quinoa on your plate. Top with alternating tomato and mozzarella slices. Drizzle about a TB of olive oil and a TB of balsamic vinegar over the top, sprinkle with chopped basil and feta cheese
