As I mentioned the other day, pasta is a single girl staple. Let’s face it, we don’t want to work all day only to come home and clean, take care of animals, cook a meal that is time consuming and dirties lots of dishes.  This dish is a perfect mid week dinner; it’s quick, light and full of flavor. Fair warning, this is very spicy with the rotel so feel free to use your choice of diced tomatoes.

Single girl pasta

  • 8 oz pasta
  • 1 can rotel (I love spicy so I use rotel but you could certainly use italian tomatoes)
  • 1 to 1 1/2 C chicken broth
  • 1/4 C grated parmesan cheese
  • 1/4 tsp italian seasoning
  • salt/pepper to taste
  • 1 TB corn starch

Cook pasta according to package. While pasta is cooking, mix remaining ingredients in a small bowl. After you’ve drained your pasta, return to pan and add tomato mixture; let simmer about 10 minutes until sauce thickens up and is heated thoroughly.
