I hope you all had a wonderfully fun and safe NYE, mine was everything I wanted. Now, it’s time to start a new year, make new memories and write the next chapter. My morning is complete; my dogs have had their pup cups, I’ve had my VSVL and delicious french toast with fresh raspberry/blueberry compote and now I can’t think of a better way to spend the 1st afternoon of 2016 than by watching my Vols in the Outback Bowl!

Single Girl NY Day French Toast w/ fruit compote


  • 1/2 C of fresh raspberries and 1/2 C blueberries
  • 2 TB brown sugar
  • 1 tsp vanilla
  • 1 TB heavy cream
  • 1 TB butter

In a small saucepan, melt 1 TB butter then add the remaining ingredients. Simmer until thick and bubbly.


  • 1 egg
  • 1/4 C heavy cream
  • 1/4 C half and half or milk
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 1 TB sugar
  • 2 pieces thick cut bread (Texas toast works well)

Preheat a griddle or sauté pan, and lightly butter (you want your pan to be hot so your fench toast gets a beautiful golden brown) Lightly beat egg; whisk in cream, half and half, vanilla, sugar and cinnamon until combined. Dip bread completely in custard mix and place on hot griddle, top with compote and sprinkle with powdered sugar. Cheers!
