2015 is almost over, let’s just say I am ready for this next year and next chapter.  I’m not one to make resolutions, I think you should live your life EVERY DAY of the year, not start at the beginning and waver off towards the end only to make the same resolutions again.  So with no frantic resolution making, I’m thinking of bubbly.. CHAMPAGNE and toasting the new year and all it will bring.  When talking champagne, the terms “brut”, “extra dry” and “dry or sec”  come to mind.  These terms refer to the sweetness or lack thereof and are the opposite of what you think.  Brut is the driest with virtually no sugar, next is extra dry which is slightly sweeter and then dry or sec being sweet. Additionally, the terms Blanc de Blancs and Blanc de Noirs refers to the type of grape used.  Blanc de Blanc is champagne made with chardonnay grapes the Blanc de Noirs is made with a pinot noir grape.  I typically like extra dry and think it pairs nicely in my two favorite NYE cocktails:

Champagne Cocktail

  • chilled champagne
  • sugar cube soaked in bitters

Place your soaked sugar cube in the bottom of a flute and top off with your favorite champagne, garnish with a twist of lemon or orange. 

Cranberry Champagne Cocktail

  • chilled champagne
  • frozen cranberry concentrate
  • frozen cranberries for garnish

Place 1 TB frozen concentrate in your flute and top off with your favorite champagne, garnish with 3 frozen cranberries for a fun, flirty and festive cocktail.
