Happy Monday! Christmas is over, NYE is just around the corner and it’s a blah rainy Monday (snowy for some others). Here is another way to chase those Monday Blues away, my favorite ooey gooey brownies; they always make me smile.  When I was young I remember making batch upon batch of these, with my mom, and sitting on the couch spoon in each of our hands eating the whole pan; they are that good and you won’t be disappointed.

Preheat oven to 350/lightly grease 8 or 9-in square baking pan

  • 1 C white sugar
  • 1/3 C unsweetened cocoa
  • 1/3 C melted butter
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 3/4 C Flour
  • 1/2 tsp baking powder
  • 1/2 C chocolate chips
  • 1 C mini marshmallows

In medium mixing bowl, combine sugar, cocoa and melted butter. Add eggs and vanilla until well combined. In small bowl, mix dry ingredients then add to your sugar mixture, mix thoroughly.  Add chocolate chips and marshmallows, stir just until incorporated ; pour into prepared brownie pan. Bake 22-25 minutes, brownies will pull away from the side of the pan and the smell of warm chocolate will fill your home!  Sprinkle lightly with powdered sugar or for a double chocolate fix, top with chocolate icing (recipe to follow).
